At Clos Liebau, our philosophy is based on one principle: respect for life – from vine to bottle. Our approach goes far beyond organic farming to create authentic Alsatian wines that are true reflections of their terroir and vintage.
At the Vineyard: The Alliance of Life and Ecology
Our plots, composed of sixty-year-old vines, are at the heart of our commitment. We have chosen to integrate resolutely ecological cultivation practices to regenerate our soils and strengthen biodiversity.
- Regenerative Biodiversity: Our vines are cultivated according to the principles of Biodynamics, Permaculture, and Agroforestry. The integration of Syntropy is one of our most advanced approaches, allowing trees (with their leaves and branches) to naturally improve soil structure and fertility.
- Soil Protection and Health: Our plots have not seen any chemical products and are rarely worked with a plow. Thanks to these methods, we are able to reduce treatment doses well below the thresholds authorized by the specifications of Organic Agriculture.
At the Winery: Natural Wines, Precision and Minimalism
Our work in the cellar is guided by listening to the juice and adapting to the year's climate. We intervene as little as possible to allow the wine to express itself in its true form.
- Respectful Equipment: We use old wooden presses for gentle pressing, stainless steel tanks for maceration, and old barrels for aging some of our wines. This blend of tradition and technical precision allows us to reveal the unique character of each vintage.
- Water Management and Circular Economy: Ecology extends to our water management, which we reuse in our gardens or for watering our animals.
Vibrant Wines: Ethics of the Bottle
Our goal is to deliver living and stable wines, with minimal intervention on the final product:
- Zero Filtration: Our natural wines are not filtered in order to preserve all their aromatic richness and textural complexity.
- Minimum Sulfur: The use of sulfur is dictated by the need for stability and is kept at an extremely low level, between 5 and 20 mg/L, and only when necessary. This ensures wines with little or no sulfites.
- Ethical Packaging: The commitment culminates in hand-labeling using a specific organic adhesive. This adhesive allows for easy label removal, enabling the bottles to be reused or recycled, thus completing our virtuous cycle.
